​Sea Bass Tom Yum with Thai Homemade Chili Paste


300 g. Sea Bass

10 mushrooms

8 cups water

1 tbsp Thai Homemade Chili Paste

3 lemongrass

3 shallots

2-3 galangal

1 teaspoon of salt flowers

1-1/2 tbsp coconut sugar

3 tbsp fish sauce

2-1/2 tbsp tamarind juice

2 tablespoons lemon juice

Spring onion, coriander , red chili


Tom Yum pounder.

3-5 coriander roots

1 teaspoon ground pepper

3 shallots

2 galangal

1 lemongrass

Homemade Thai Chili Paste

1-1/2 tbsp Dried chili

1/4 cup Thai garlic

1/2 cup shallots

a little salt

Homemade Thai Chili Paste

Roast garlic and onion together until lightly cooked, followed by roasting chili and salt until crispy.
